    Cover with vented plastic wrap and microwave on 100 percent power (high) for 2 to 3 minutes or just until tender. (Or in covered small saucepan, cook broccoli in small amount of boiling water for 4 to 6 minutes or just until tender.) Drain well; set aside.
  • Layer half of the bread cubes in a greased 2-quart square baking dish. Top with cheese, ham, and broccoli; add remaining bread cubes. In bowl, combine milk, egg product, onion, mustard, and pepper. Pour egg mixture evenly over the layers in dish. Cover with foil and chill in the refrigerator for 2 to 24 hours.
  • Preheat oven to 325 degrees F. Uncover and bake for 60 to 70 minutes or until knife inserted near center comes out clean. Let stand for 5 minutes. Makes 6 servings.

    Ingredients

    • 1 tablespoon olive oil
    • 1 medium sweet onion, diced
    • 1 bag (1 pound) frozen chopped broccoli, thawed
    • 1 loaf Italian bread (14 ounces), cut into cubes
    • 1/2 pound sliced low-sodium deli ham, chopped
    • 6 large eggs
    • 1 1/2 cups 2% milk
    • 2 tablespoons chopped fresh or freeze-dried chives
    • 1 tablespoon Dijon mustard
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1 1/2 cups shredded cheddar

    Method

    1. Heat oven to 375 degrees F. Coat a 2-quart oval baking dish with nonstick spray.
    2. Heat oil in a large nonstick skillet over medium heat. Add onion and cook 5 minutes. Add broccoli and cook another 3 minutes.
    3. Place bread cubes in a large bowl. Stir in broccoli-onion mixture and the ham.
    4. In a medium bowl, whisk together the eggs, milk, chives, mustard, salt and pepper. Pour over bread mixture, stirring to mix. Transfer to prepared dish, and top evenly with cheese.
    5. Bake at 375 degrees F for 40 to 45 minutes, or until strata registers 160 degrees F on an instant-read thermometer.

    2. In bowl whisk together eggs and sour cream. Stir in milk, onion, mustard, and 1/8 teaspoon black pepper. Pour over layers in dish. Cover; chill for 2 to 24 hours.
    3. Bake, uncovered, in 325 degree F oven 60 to 65 minutes or until internal temperature registers 170 degree F on an instant-read thermometer. Let stand 10 minutesbefore serving. Makes 6 servings.
