Nutty apple streusel cake recipe

Ingredients

  • 200g light muscovado sugar
  • 200g softened butter
  • 4 eggs, beaten
  • 100g self-raising flour
  • 100g plain wholemeal flour
  • 2 tsp baking powder
  • 3 tbsp milk
  • 2 tsp ground mixed spice
  • 4 peeled and cored small eating apples (Cox's are ideal)
  • 1 tbsp light muscovado sugar
  • 1 tbsp plain flour
  • 2 tbsp butter
  • 50g roughly chopped blanched hazelnuts
  • 100g butter, softened
  • 140g icing sugar, sifted
  • drop vanilla extract (optional)

Method

Butter two 20cm sandwich tins and line with non-stick baking paper. In a large bowl, beat all the cake ingredients together until you have a smooth, soft batter.
  • Divide the mixture between the tins, smooth the surface with a spatula or the back of a spoon. Once the cake mix is in the pan, poke into it thick slices from the 4 peeled and cored small eating apples (Cox’s are ideal). Then bake for about 30 mins (half way through baking add the streusel mix on top of one of the cakes, see next step below) until golden and the cake springs back when pressed. Turn onto a cooling rack and leave to cool completely.
  • Meanwhile, roughly rub together the light muscovado sugar, plain flour and butter. Mix in the roughly chopped blanched hazelnuts. Half-way through baking, sprinkle the streusel mix on top of one of the cakes.
  • To make the filling, beat the butter until smooth and creamy, then gradually beat in icing sugar. Beat in vanilla extract if you’re using it. Spread the butter cream over the bottom of the sponge that doesn’t have the streusel on top and sandwich the two halves of the cake. Keep in an airtight container and eat within 2 days.

    • Nonstick cooking spray
    • 2/3 cup fat-free milk
    • 2/3 cup chopped pitted dates
    • 1/4 teaspoon salt
    • 3/4 cup coarsely shredded peeled cooking apple
    • 1 teaspoon vanilla
    • 1 Egg, lightly beaten
    • 2 tablespoons vegetable oil
    • 1/2 cup chopped pecans
    • 1/4 cup packed brown sugar
    • 1 tablespoon butter, softened
    • 1 teaspoon all-purpose flour
    • 1 teaspoon ground cinnamon
    • 1 1/2 cups all-purpose flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon baking soda

    Method

    1. Preheat oven to 350 degrees F. Lightly coat an 8x8x2-inch baking pan with cooking spray. Set aside.
    2. In a small saucepan combine milk, dates, and salt; heat until steaming. Remove from heat. Stir in apple and vanilla; cool. Add egg and oil; stir until combined. Set aside.
    3. In a small bowl stir together pecans, brown sugar, butter, the 1 teaspoon flour, and the cinnamon; set aside.
    4. In a medium bowl whisk together the 1-1/2 cups flour, the baking powder, and baking soda. Add milk mixture all at once to flour mixture. Stir just until combined. Spoon batter into prepared baking pan. Sprinkle evenly with pecan mixture.
    5. Bake about 25 minutes or until a knife inserted near the center comes out clean. Cool slightly. Serve warm.

    Method

    1. Lightly coat a 3-1/2- or 4-quart slow cooker with cooking spray; set aside. In a small saucepan bring apple pie filling to boiling. Stir in cherries. Transfer apple mixture to prepared cooker.
    2. In a medium bowl stir together flour, granulated sugar, baking powder, and salt. Add milk and melted butter; stir just until combined. Stir in the 1/2 cup walnuts. Pour and evenly spread batter over apple mixture in cooker, spreading evenly.
    3. In the same small saucepan combine apple juice, brown sugar, and the 1 tablespoon butter. Bring to boiling. Boil gently, uncovered, for 2 minutes. Carefully pour apple juice mixture over mixture in cooker.
    4. Cover and cook on high-heat setting for 2 to 2-1/2 hours or until a wooden toothpick inserted near center of cake comes out clean. Remove crockery liner from cooker, if possible, or turn off cooker. Cool, uncovered, for 30 to 45 minutes.
    5. To serve, spoon warm cake and its sauce into dessert dishes. If desired, top each serving with Sweetened Whipped Cream and additional walnuts.

    1. Preheat oven to 350 degrees F. Line two 8x8x2-inch baking pans with parchment paper. Grease and flour the pans; set aside.
    2. In mixing bowl whisk buttermilk, oil, brown sugar, eggs, baking powder, cinnamon, baking soda, salt and vanilla until combined. Whisk in flour; stir in apple. Divide evenly between prepared pans.
    3. Bake 40 minutes or until wooden toothpick inserted near center comes out clean. Cool in pans on wire rack 10 minutes. Invert cake layers from pans onto racks; remove parchment paper. Cool completely on racks.
    4. Prepare Fruit Topper. Place one cake layer, flat side up, on servingplatter. Spoon on about two-thirds of topper. Top with second cake layer and remaining mixture. Serve immediately. Makes 10 servings.
